I cut the pumpkins in half, and scraped out all the seeds and the pulp. An ice cream scoop, or a large spoon work great for scooping out the pumpkin guts. Pumpkin Cheesecake
One of my favorite things about the changing seasons is dusting off recipes that are season-specific. This one for pumpkin cheesecake is one of my favorites (along with chocolate zucchini cake and pumpkin cookies!) and makes a great alternative to a regular pumpkin pie. The recipe makes 16 servings and keeps well in the refrigerator for a few...
Crustless Pumpkin Pie
Crustless Pumpkin Pie
I wanted to use some of the pumpkin I baked the other day to make some pumpkin pie, but I decided to skip the crust. The pumpkin is my favorite part, so I decided to make a crustless pumpkin pie. It turned out delicious so I thought I’d share the recipe here. We topped the pumpkin pie with some TruWhip , which I’ll be back with a review...
Pumpkin Pie Blondies
Pumpkin Pie Blondies
I saw several recipes for pumpkin blondies last year, but I didn’t get a chance to make them myself. Tonight I decided I would give them a try, so I dug in and browsed through quite a few recipes, both online and off. In the end I decided to combine a simple blondie recipe, with a pumpkin pie recipe and see what happened. Here’s the...
Spiced Pumpkin Cheesecake
Spiced Pumpkin Cheesecake
One of my favorite things about fall is the excuse to use pumpkin for pretty much anything. From muffins to cakes to breads and even cheesecake, you can add pumpkin to pretty much anything. Whether you make this for dessert for Thanksgiving (a nice twist on traditional pumpkin pie) or even sooner for a Halloween party or other get-together, it’s...
Roasted Chicken With Potatoes
Roasted Chicken With Potatoes
I roasted a whole chicken yesterday. When I was a newlywed, I roasted a lot of whole chickens. They were economical and I liked the presentation of a complete browned bird, but eventually I fell for the ease of using chicken breasts and tenders. I used a 3.5 lb bird and a dry rub featuring smoked paprika and a little cumin.  The house smelled...

Counting Down to Pumpkin Spice Lattes
Counting Down to Pumpkin Spice Lattes
If you’re like me, you count down the days until September 1st . Not only does it mark an (unofficial) turn of the seasons with cooler weather, crisper air, and falling leaves, it also means pulling all of my autumn decorations out of storage and decking out the house in reds, oranges and golds! Naturally, my thoughts also turn to warmer...
